Chicken skewers with avocado lime butter

Our chicken skewers with avocado lime butter are perfect for the family or entertaining. A fast tasty dinner or snack that can be prepared in advance. It’s really easy – you just have to go turn on your grill or BBQ.

  • 2 x small chicken breasts, skin off
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon dried oregano
  • sea salt and freshly ground black pepper

for the avocado butter

  • 150g softened butter
  • ½ large ripe avocado
  • zest of 1 lime
  • 1 medium garlic clove, crushed
  • sea salt and freshly ground black pepper

  • Bamboo skewers that have been soaked in water


  1. Cut the chicken breasts in 1cm thick slices. In a Multix freezer bag add the olive oil, oregano and salt & pepper. Also add the chicken breast slices. Seal the bag and massage the marinade into the meat. Refrigerate.
  2. In a medium bowl, add all the avocado butter ingredients. Using a fork, mash the avocado, butter, garlic and lime zest until well combined. Season to taste, then transfer to a smaller serving bowl, cover with cling film and refrigerate until ready to serve.
  3. Preheat the grill or BBQ to medium high. Tread the marinated chicken stripes on to the pre-soaked skewers. Grill, turning at least once until the meat is cooked through. Serve hot,  with avocado lime butter and a fresh green salad.
