Quick sausage rolls

There is nothing better than a homemade sausage roll straight out of the oven and these quick sausage rolls, as the name suggests, are so easy to make.  Make a double batch and freeze the rest for fast and easy lunches during the week, that is…if there are any left overs.

Ingredients

  • 4 sheets of frozen puff pastry (defrosted)
  • 8 large good quality pork sausages
  • ½ cup good quality tomato sauce or relish
  • 1 egg lightly beaten

Method

  1. Preheat oven to 200oC.
  2. Line a large baking tray or 2 smaller trays with Multix Bake. Line a chopping board with some Multix Bake, then place a sheet of pastry on the bake. Cut the sheet in half. Spoon a small amount of tomato sauce or relish down the middle of each pastry half. Remove the skin from 2 sausages and stretch them out slightly until they fit to each end of the sheets of pastry. Brush a little water on one long side of the half sheet of pastry. Using the baking paper as a support, lift the pastry and roll evenly over the sausage and relish filling. Press the edges together firmly and either use a fork or your fingers to crimp the edges, making a tight and decorative seal. Repeat with the other half. Divide each long roll into 3, transfer to the baking trays, making sure that there is about 2cm between each sausage roll to allow for the pastry rising. Repeat with the remaining sheets of pastry and sausages.
  3. Using a very sharp knife, cut three shallow cuts into the top of each roll. Brush each roll lightly with beaten egg and bake for about 20 minutes or until crisp, golden and the sausage meat is fully cooked through. Serve warm with extra tomato sauce or relish.

Tips:

  • For easy party food, just cut reach roll into smaller bite sized pieces before baking.
  • To get your kids to eat more vegetables, remove the casing from the sausages, place in a bowl, then add grated carrot and zucchini. Mix well before using to fill the sausage rolls (they’ll never notice those vegetables).
