Turkey breast marinated with herbs and wine

Turkey is a delicious and low fat meat as well as a traditional Christmas favourite. This recipe is perfect if your cooking for smaller numbers. The turkey breast is roasted in a Multix Oven bag that cleverly keeps all the marinade flavours and juiciness locked in the meat. You can serve it with either traditional roast vegetables or a fresh salad.

Ingredients

  • 1 small free-range turkey breast (about 1.5kg)
  • ¼ cup olive oil
  • ½ cup dry white wine
  • 4 tablespoons mint leaves torn
  • 4 tablespoons parsley leaves chopped
  • 4 tablespoons coriander leaves chopped
  • 1 garlic clove crushed
  • juice 1 lemon juice
  • ½ teaspoon ground cumin
  • 1 teaspoon sea salt
  • ½ teaspoon freshly ground black pepper

  • 1 large Multix resealable bag
  • 1 Multix Oven bag

Method

  1. Place all the ingredients in the Multix quick seal bag, seal and marinate in the fridge for at least 2 hours or overnight.
  2. Preheat the oven to 180°C.
  3. Transfer the turkey breast with the marinade ingredients to a Multix Roasting bag and place on an oven tray. Cook in the oven for about 1 hour and 15 minutes or until the meat is cooked through but still juicy. Remove in the cooked breast from the bag and allow it to rest covered with Alfoil for about 20 minutes before serving . Transfer the pan juices to a small pan, over a medium heat reduce slightly and check the seasoning. Serve the turkey with the reduced pan juices and either traditional roast vegetables of your choice or salad and steamed rice.

Tip: Turkey breast needs to cook for about 25 minutes for every 500g.
