Triple choc cookies

Who doesn’t love chocolate? These triple choc cookies are a treat for the real chocoholic! The most decadent chewy yet crisp chocolate biscuits ever and they can be all yours in under 30 minutes.

Ingredients

  • ½ cup granulated raw sugar
  • ½ cup brown sugar
  • 125g butter, softened
  • 1 egg, lightly beaten
  • ½ teaspoon vanilla extract
  • 60g dark chocolate, melted and slightly cooled
  • 1½ cups selfraising flour, sifted
  • ½ teaspoon salt
  • ¼ teaspoon baking soda
  • ¼ teaspoon baking powder
  • ¼ cup baking cocoa
  • 100g milk chocolate chips or chocolate, cut in pieces
  • 75g white chocolate chips or chocolate, cut in pieces

Method

  1. Preheat the oven to 180oC.
  2. Line 2 large baking trays with Multix Bake. Fit a mixer with the flat attachment. Add the butter and sugar to the bowl, then beat for about 3 minutes until light and fluffy. Add the egg, melted chocolate and vanilla extract to the butter and sugar mixture until well combined.
  3. In a large bowl, first sift and then stir together the flour, cocoa, salt, baking powder and baking soda.
  4. So it doesn’t go everywhere, make sure the mixer is on a low speed, add the flour and cocoa mixture then process slowly until it’s combined with the rest of the batter. Then turn the speed up and process for about 2-3 minutes until the batter is thick and smooth. Add the milk chocolate and white chocolate chips and process again till fully combined.
  5. Using either an ice cream scoop or your clean hands, roll the chocolate chip dough into balls 4-5cm across. Place on the bake lined trays with a 4cm gap between each biscuit, to allow for expansion. Bake for about 12 minutes oven at 180oC until the top cracks but the biscuit is still soft in the centre. Remove from the oven and allow to cool on the tray for at least 10 minutes before transferring to a wire rack – they do firm up a little as they cool.
