Rice Paper Spanakopita

Ingredients

  • 6 rice paper sheets
  • 1 tsp olive oil
  • ½ brown onion, finely diced
  • 2 cups baby spinach, roughly chopped
  • 150g cottage cheese (or ricotta)
  • 80g feta, crumbled
  • 2 tbsp grated parmesan
  • 2 eggs, divided
  • 1 tsp dried oregano
  • Salt and cracked pepper, to taste
  • Sesame seeds (optional)

Method

  1. Place a Multix Air Fryer Paper Liner Sheet into your air fryer basket.
  2. Heat the olive oil in a pan over medium heat. Sauté the onion until softened, then add the spinach and cook until wilted. Remove from the heat and allow to cool slightly.
  3. In a bowl, combine the spinach mixture with the cottage cheese, feta, parmesan, oregano and one egg. Season with salt and pepper.
  4. Whisk the remaining egg in a shallow bowl. Lightly dip each rice paper sheet into the egg on one side only until just pliable, then slightly overlap three sheets to create one large rectangle. Repeat with the remaining three sheets.
  5. Divide the filling between each rectangle, spreading it into a long strip along the bottom third. Roll tightly, folding in the sides as you go to create two logs.
  6. Coil each log into a spiral and place onto the prepared Multix Air Fryer Paper Liner Sheet. Brush with any remaining egg and sprinkle with sesame seeds if using.
  7. Air fry at 190°C for 12–15 minutes, or until golden brown and crispy.
  8. Carefully lift the liner from the basket and serve warm with tzatziki, lemon wedges or a fresh Greek salad.
