Jurassic swamp jelly cakes

Any budding Paleontologist will love unearthing the dinosaur fossils treats hidden beneath the surface of these Jurassic swamp jelly cakes. Perfect for the next birthday party or any occasion for that matter.

Ingredients

  • 2 x 85g packs lime flavoured jelly crystals
  • 600ml water
  • a selection of your favourite frog, snake or dinosaur lollies
  • a pack of chocolate ripple biscuits

You'll Need

  • Multix large foil patty pans
  • Multix freezer bags
  • Various plastic dinosaurs

Method

  1. Make 1 packet of jelly following the manufacturers instructions but using only 300ml or 2/3’s of the normal amount of water (so it sets harder) and allow to cool slightly.
  2. Line a 12 hole muffin tray with Multix foil patty pans. Pour the jelly into the patty cases to 1/3 full. Refrigerate till set (about 1 hour).
  3. Make the second pack of jelly as above. Allow it to cool slightly.
  4. While the second batch of jelly cools arrange a selection of snakes, dinosaurs and any other lollies on to the first layer of jelly (you want it to look like a dinosaur swamp). Top up the patty pans with just enough jelly to make the slithery things look like their swimming in the swamp. Return to the refrigerator until set solid.
  5. Just before serving place the biscuits in a freezer bag and crush with a rolling pan. Use the crushed biscuit on a board or plate to make chocolate soil to serve your jelly cakes on decorate with plastic dinosaurs.
  6. Serve chilled.
