Grilled figs with goat cheese and prosciutto

Grilled figs with goat cheese and prosciutto are absolutely delicious. Figs and prosciutto are a match made in food heaven, and with a slice of goats cheese, well… you can’t go wrong when you next entertain. These canapes will have your guests coming back time and time again, that’s if you can resist devouring them before they arrive.

Ingredients

  • 8 ripe figs
  • 150g fresh soft goats cheese
  • 4 slices very thinly sliced prosciutto torn in ribbons
  • freshly ground black pepper
  • extra virgin olive oil for drizzling

to serve

  • a few thyme leaves ( optional)

Method

  1. Preheat the grill to medium high.
  2. Line a oven tray with Multix Alfoil. Cut the figs in half and place a slice of goats cheese on each one.  Pop the figs under the grill for about 2 minutes until the goat cheese starts to brown at the edges.  Remove them from the grill and top with a twist of torn prosciutto. Place them under the grill again for about 1 minute until the prosciutto becomes crisp and golden. Remove from the grill finish with a grind of fresh black pepper and a few scattered thyme leaves.
  3. Serve immediately as a light entrée.
