Goji superfood slice

If you’re looking for a cane sugar free sweet treat full of energy, then look no further than our goji superfood slice.  You can buy superfood bars from a health food shop for $4-5 each or you can make a batch of them yourself in 10 minutes for about a third of that price.

Ingredients

  • 300g pitted fresh dates
  • 1 cup pepitas (pumpkin seeds)
  • 1 cup goji berries
  • 1 cup coconut flakes
  • ¼  cup raw cocoa powder
  • ½  cup sunflower seeds/
  • 2 tablespoons coconut oil

  • Multix Cling

Method

  1. Line a slice tin with Multix Bake. In a food processor add the pitted dates and coconut oil and blitz till smooth. Add the raw cocoa, sunflower seeds, coconut and half the pepitas and half the goji berries. Blitz again until everything starts to stick together.
  2. Transfer the mixture roughly to the lined slice tin. Place another sheet of Multix Bake on top and press the mixture down firmly and evenly into the tin. (Tip: An egg slice works really well to press down the mixture and the bake stops it sticking) keep going until it’s smooth and really packed down into the tin. Remove the top layer of bake and scatter the slice with the remaining half cups of pepitas and goji berries. Replace the bake a gently press the seeds and berries into the top. Cover the whole thing with Multix Cling. Chill and store in the refrigerator.
  3. When your ready to serve, use a sharp knife to cut the slice into squares, keep chilled until ready to serve.
