Goats cheese and thyme cigars

With only a few ingredients, these goats cheese and thyme cigars are a simple to make canapé, that looks absolutely stunning and tastes just heavenly. Perfect for entertaining when friends come over, or maybe to take as a plate when heading out.

Ingredients

  •  4 sheets filo pastry
  • 2 tablespoons butter, melted
  • 200g soft goats cheese or feta
  • 1 egg, lightly beaten
  • 1 tablespoon fresh thyme leaves
  • freshly ground black pepper

Method

  1. Preheat the oven to 170oC. Line a baking sheet with Multix Bake, set aside until ready to use.
  2. In a medium bowl, combine the cheese with the egg until it becomes a smooth paste, season with black pepper. Lay one sheet of filo pastry in front of you and brush lightly with melted butter. Fold the top down 1/3 and brush with butter again. Spoon the goats cheese mixture in a line about 1.5cm wide along the length of the pastry furthest from you. Place a thin line of thyme leaves about 4cm from the end of pastry closest to you. Roll the pastry over the goats cheese as tightly as you can and continue rolling until a cigar shape is formed and the thyme leaves are visible under the pastry. Repeat until all of the pastry, goats cheese and thyme has been used.
  3. Cut each cigar into 3 and arrange on the bake lined trays with at least 5cm of space between each cigar. Brush the outside of each cigar with more melted butter and bake in the oven for around 15 minutes or until the pastry has turned a golden brown. Serve hot or cold.
