Citrus chilli pork steaks

Create this mouth watering meal of citrus chilli pork steaks in minutes. The intensely flavoured homemade marinade is simple to make and tastes sensational. Ingredients

  • 8 pork rump steaks or loin chops
  • ½ cup orange marmalade

for the marinade

  • 2 Thai bullet chillies, deseeded and very finely sliced
  • 2 medium garlic cloves, crushed
  • ½ cup coriander leaves, finely chopped
  • 2 tablespoons fish sauce
  • 2 tablespoons olive oil
  • ¼ cup lime juice
  • to decorate a few coriander leaves

Method

  1. Place 2 Multix freezer bags 1 inside the other. Place the steaks in the bags with and the marinade ingredients. Seal the bags and use your hands through the bags to massage the marinade into the steaks. Place in the refrigerator for at least 2 hours or overnight.
  2. Preheat the BBQ flat plate or a large heavy bottomed frying to medium high. Lay a sheet of Multix Bake on the flat plate or the frying pan (This marinade is messy and the bake will make clean up easy) fry the pork turning once for about 3-4 minutes on both sides or until the outside is caramelized brown and the meat is just cooked through. Rest the meat covered in Alfoil in a warm place for 5-10 minutes before serving. Serve with a fresh citrus based salad like a rocket, orange, bean and avocado salad with a lime dressing.
