Baked chicken wings with nahm jim sauce

These baked chicken wings with nahm jim sauce are sensational. Nahm jim is a spicy Thai chilli dipping sauce from north eastern Thailand which adds zing to this easy to make dish.

Ingredients

  • 1 kg chicken wings, tips removed and cut in half
  • 2 tablespoons fish sauce
  • 2 tablespoons sesame oil
  • 4 corn cobs, silk removed and husks pulled back

for the nahm jim sauce

  • 1 long red chilli, deseeded and roughly chopped or 3 bird’s eye chillies with seeds, if you like things hot
  • 2 tablespoons palm sugar, finely grated
  • a pinch of sea salt
  • 1 medium garlic clove, peeled and sliced
  • ¼ cup fish sauce
  • ¼ cup lime juice
  • ¼ cup coriander leaves, picked and roughly chopped

  • extra coriander leaves
  • 1 chilli, sliced

Method

  1. Pre heat the oven to 220oC or hooded BBQ to medium high
  2. Place the wing pieces in a large Multix freezer bag and pour in the fish sauce and 1 tablespoon of the sesame oil. Seal the bag and massage thoroughly to ensure each wing piece is well coated in fish sauce and oil. Line a large baking tray with Multix bake, or if you’re cooking them in a hooded BBQ, use Multix Alfoil roasters. Tip the wings onto the tray and spread out in a single layer. Bake for about 35 to 40 minutes or until they are golden brown and the meat is very tender. Brush the corn with the remaining tablespoon of sesame oil. Wrap in Multix bake and Alfoil then seal tightly. Roast in the oven or BBQ along with the chicken wings.
  3. While the wings are baking make the nahm jim sauce, using either a small food processor or a pestle and mortar. Process or pound the chopped chilli and garlic with the salt to a course paste. Add the sugar and combine again. Stir in the fish sauce and lime juice. Check the seasoning, it should be a zingy balance between salty, sweet & sour, with a hint of chilli. Finish with the chopped coriander leaves. Unwrap the corn and place on a large serving plate with the wings. Drizzle with a little of the nahm jim sauce and scatter with coriander leaves and sliced chilli. Serve the rest of the sauce in a little bowl on the side.
