Ingredients

• 125g unsalted butter, softened
• ½ cup brown sugar
• ¼ cup caster sugar
• 1 egg
• 1 tsp vanilla extract
• 1½ cups plain flour
• 1 tsp baking powder
• Pinch of salt
• ¾ cup milk chocolate chips
• ½ cup macadamias, roughly chopped

Method

  1. Preheat oven to 180°C (fan-forced 160°C).
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and caster sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing until well combined.
  4. Sift in the flour, baking powder, and salt. Stir until a soft cookie dough forms.
  5. Fold through the chocolate chips and chopped macadamias.

  7. Roll tablespoons of dough into balls and place onto the lined tray, allowing space for spreading.
  8. Lightly flatten each cookie and bake for 12–15 minutes or until golden around the edges.
  9. Allow cookies to cool on the tray for 5 minutes before transferring to a wire rack.

Serve warm or store in an airtight container for an easy sweet treat throughout the week.
