Easter Egg Nest Cupcakes

Ingredients

For the cupcakes

  • 100g unsalted butter
  • 100g caster sugar
  • 100g self-raising flour
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1 small pinch of salt

 

For the butter icing

  • 100g unsalted butter, softened
  • ¼ cup milk
  • 1 teaspoon vanilla extract
  • 4 cups icing sugar, sifted
  • Yellow food colouring

 

To decorate

  • Speckled chocolate mini Easter eggs
  • Multi-coloured 100s and 1000s

  • Multix Patty Pans or Scalloped Paper Muffin Pans
  • Multix Piping Bag and Nozzles

Method

  1. Preheat oven to 170°C. Arrange 12 Multix scalloped muffin cases on an oven tray.
  2. In an electric mixer, beat butter for 2 minutes until pale and creamy. Gradually add sugar in thirds, beating well between each addition.
  3. Add eggs one at a time, beating for about a minute after each. Mix in vanilla extract.
  4. Sift in half the flour and beat until combined. Repeat with remaining flour, scraping down the sides of the bowl and giving the batter a final mix.
  5. Divide the batter between the 12 muffin cases, filling about ⅓ full. Bake for 15–20 minutes, or until a skewer inserted in the centre comes out clean. Transfer to a wire rack to cool completely.
  6. While the cupcakes cool, make the icing. In a mixer, beat butter until smooth. Slowly add milk, half the sifted icing sugar, and vanilla extract, beating until well combined.
  7. Add the remaining icing sugar and continue beating until light and fluffy. The icing should be a smooth, spreadable paste—add a splash of milk if too dry or more icing sugar if too wet. Mix in yellow food colouring until evenly combined.
  8. Once cupcakes are completely cool, transfer icing to a Multix piping bag fitted with a star nozzle. Pipe a circular nest shape onto each cupcake, leaving high sides.
  9. Decorate each ‘nest’ with mini Easter eggs and a sprinkle of 100s and 1000s.
