Baked Mexican-Style Sweet Potatoes with Spicy Bean Salsa

  • 2 large sweet potatoes
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • Salt & pepper

Spicy Bean Salsa

  • 1 cup black beans, rinsed
  • 1 tomato, diced
  • 2 tbsp red onion, finely diced
  • 1 small red chilli, chopped
  • Juice of ½ lime
  • Salt & pepper

To Serve

  • Grated cheese
  • Guacamole
  • Fresh coriander
  • Lime wedges

Method

    1. Preheat BBQ or oven to 200°C.
    2. Pierce sweet potatoes with a fork, drizzle with olive oil and season with smoked paprika, salt and pepper.
    3. Wrap each potato in Multix BBQ & Grill Embossed Alfoil and bake for 45–60 minutes until soft.
    4. <Meanwhile, combine all salsa ingredients in a bowl and mix well.
    5. Slice open the cooked sweet potatoes and top with cheese, spicy bean salsa, guacamole, coriander and a squeeze of lime juice.
