  • 2½ cups self raising  flour, sifted
  • ½ teaspoon salt
  • 150g butter, diced
  • 350g white chocolate, broken into pieces
  • 11/3 cups light brown sugar, lightly packed
  • 2 eggs, lightly beaten
  • 3 medium ripe bananas, mashed
  • 2 teaspoons vanilla extract

To decorate

  • ½ cup banana chips (optional)

  1. Preheat oven to 180oC . Line a 20 x 30 deep slice or cake pan with Multix Bake.
  2. In a medium saucepan on a low heat, melt the butter. Remove from the heat, add the pieces of white chocolate, stirring until melted.
  3. In a large bowl add the mashed bananas, beaten eggs, sugar and vanilla. Stir well till combined. Stir in the melted white chocolate and butter, mix well, then fold in the sifted flour and salt. Fold gently until you have a smooth batter (don’t worry if you have the odd small lump of banana).
  4. Pour into the lined cake pan and scatter with banana chips (if you are using them). Cover with another sheet of bake and cook for about 35 minutes or until just set when tested with a skewer. Cool in the tin before cutting in rectangles.
