Spiced rhubarb with dates and yoghurt

Spice up and sweeten your life with this spiced rhubarb with dates and yoghurt, it makes a wonderful breakfast or even dessert.

  • 3 sticks of rhubarb, cut into 5cm pieces
  • ½ cup dates, pitted and quartered
  • 2 teaspoons orange zest
  • 2 tablespoons honey (divided)
  • 1 teaspoon cinnamon
  • 1/3 cup water
  • 300ml Greek style plain yoghurt
  • 1/3 cup pistachio kernels

  1. Preheat oven to 180oC. Line a baking tray with Multix Bake and place the pistachios evenly over the baking paper and cook in the oven for around 10-15 minutes or until golden brown.
  2. Line a roasting dish with Multix Bake and place the chopped rhubarb on top. Sprinkle the rhubarb with the orange zest, cinnamon and dates and drizzle 1 tablespoon of the honey over the top. Pour the cold water over the top and bake in the oven for around 15-20 minutes or until the rhubarb is soft, but still holding it’s form.
  3. Whisk the yoghurt and remaining honey together then pour into a serving dish. Arrange the rhubarb mixture over the top and pour and liquid from the rhubarb dish around the outside of the yoghurt. Sprinkle the toasted pistachios over the top.
  4. Serve warm or cold as either breakfast or dessert.
