Southern white Christmas

White Christmas has so many variations. In addition to the more normal glace cherries coconut and puffed rice bubbles this southern hemisphere version uses waxy macadamias with an optional addition of nutty Australian wattle seed. If you can’t find those ingredients locally just substitute your favorite nuts.

  • 250g white chocolate
  • 1 cup raw macadamia nuts
  • 1 cup shredded coconut
  • 1 cup rice bubbles
  • ½ cup dried cranberries
  • ½ cup unsalted pistachios kernels roughly chopped
  • ½ cup whole glace cherries
  • 1 teaspoon of ground wattle seed (optional)

  1. Line a 30cm x 20cm baking or slice tray with Multix baking paper.
  2. Melt the chocolate in a large heatproof bowl over a saucepan of just simmering water. Fold in the remaining ingredients and half the pistachios.
  3. Pour mixture into the prepared pan, pressing down with a large metal spoon finish by scattering the remaining pistachios over the top. Cover with cling wrap and refrigerate for 3-4 hours or until set.
  4. Use the baking paper to lift the slice onto a chopping board. Using a sharp knife cut into small bite size squares.
  5. Serve each square in a mini Multix patty pan.
