Rocky road

This old fashioned and easy to make rocky road recipe is a delicious treat with a little bit of crunch, a touch squishiness and a whole lot of chocolate.

Ingredients

  • 200g good quality dark cooking chocolate (70% cocoa)
  • 100g milk cooking chocolate
  • 125g unsalted butter
  • 3 tablespoons golden syrup
  • 150g sweet, plain biscuits
  • 100g marshmallows, roughly chopped

Method

  1. In a heavy based pan over a low heat add the chocolate, butter and golden syrup, stir until the chocolate is melted and all of the ingredients are combined.
  2. Remove from heat and spoon out half a cup of the chocolate mixture and set aside.
  3. Place the biscuits in a Multix freezer bag, tie the open end and bash with a rolling pin until the biscuits are broken up but not entirely into crumbs.
  4. Empty the biscuits into the chocolate mixture in the saucepan, add the marshmallows and fold through.
  5. Line a 24cm square baking dish with Multix Bake. Pour the chocolate, biscuit and marshmallow mix into the baking dish and give it a gently shake to fill the corners. Spoon the reserved chocolate mixture over the top and smooth the top gently with a wet spatula.
  6. Refrigerate for at least 2 hours, or overnight. When set, remove from the baking dish and cut into squares.
