Raw cacao and date balls

These raw cacao date balls are something a little different when you’re next entertaining, and the best thing is that these raw cacao and date balls are cane sugar free.

Ingredients

  • 1½ cups shredded coconut
  • 2 cups walnuts
  • 550g pitted fresh dates
  • 100ml or 100g coconut oil
  • ½ cup raw cacao powder

  • 1 cup desiccated coconut

You'll Need

  • 1 medium Multix freezer bag
  • Multix Bake
  • Multix Cling

Method

  1. Line a large tray with baking paper. Put the desiccated coconut in the freezer bag.
  2. In a food processor, add the walnuts and shredded coconut and blitz till processed to a fine crumb consistency.
  3. Add the coconut oil, raw cacao and pitted dates. Blitz again until the mixture forms dough like texture. Turn out into a large bowl.
  4. Use your clean hands to roll the cacao mixture into walnut sized balls about 3-4 cm across. Tip: Don’t be tempted to make them too big because they are very filling.
  5. As you make them, drop each ball into the freezer bag with the desiccated coconut. When you’ve got 3 or 4 balls in the bag hold it closed and toss until they are fully coated in coconut. Take them out one at a time, shake off any excess and transfer to the lined tray.  Repeat until all the mixture has been used. Cover with Multix cling and refrigerate for at least 30 minutes before serving.
  6. Will keep in an airtight container in the fridge for up to 7 days.
