Passionfruit lemon and banana delight

Our passionfruit lemon and banana delight, is well…delightful. Prepared in only minutes, this simple yet incredibly tasty tropical pudding takes quick desserts to new heights.

Ingredients

  • 300ml thickened cream
  • 50g meringue nests
  • 4 small bananas peeled, sliced and tossed with a little lemon juice to stop discolouration
  • ½ cup passion fruit pulp (fresh or canned)
  • ½ cup lemon butter or curd

to decorate

  • 1 small banana (skin on) cut in diagonal slices and tossed with lemon juice

You'll Need

  • Multix Large Freezer Bags
  • Multix Piping Bags

Method

  1. Whip the cream to stiff peaks.
  2. Fit a Multix Piping Bag with the largest star nozzle and place half the whipped cream into the piping bag, then refrigerate until you are ready to use.
  3. Place the meringues in 2 Multix Freezer Bags (one inside the other) and use the heel of your hand to gently crush them into rough chunks.
  4. Add the crushed meringues into the bowl with the remaining cream and mix well.
  5. Place a spoonful of meringue cream mixture into 4 sundae dishes or dessert glasses.
  6. Add a few banana slices and dot with passionfruit pulp and lemon curd.
  7. Add another spoonful of the cream mixture and repeat.
  8. Top with a swirl of piped whipped cream and finish with a slice of banana with the skin on and a drizzle with any remaining passionfruit pulp. Serve immediately.

Tip: You can also make this simple dessert with Greek style plain yogurt
