Mini iced Christmas puddings

Ingredients

  • 1 good quality dark fruitcake (approx. 800g)
  • 3 tablespoons of brandy or Cointreau
  • 100g dark chocolate melted
  • 200g white chocolate, melted
  • 1/4 cup glace red cherries
  • 1/4 cup glace green cherries

Method

  1. In a food processor blitz the fruitcake till it forms crumbs. Add the brandy and melted dark chocolate and process in short bursts until fully mixed. Line a tray with baking paper. Roll 2 teaspoons of cake mixture into a walnut sized ball and repeat with all the mixture. You should end up with about 50 balls. Place each rolled ball onto the prepared tray. Cover with cling wrap and place in the fridge for about 30 minutes until firm. Meanwhile, cut the cherries into quarters. Break up the white chocolate into squares and place in a Multix resealable sandwich bag. Seal the bag and place in a heatproof bowl half-filled with hot water until the chocolate melts and is smooth.
  2. Cut a tiny corner from the bag to make a very small hole. Remove the balls from the fridge and drizzle a little melted white chocolate over each truffle. Top with the small slices of green and red cherries. Allow the chocolate to set and then transfer each mini Christmas pudding to the small Multix patty cases and use as a handmade gift or serve after dinner with coffee.
