Miascia – Italian bread and butter pudding

Miascia – Italian bread and butter pudding comes form the Lombardy region of Italy. Rosemary is unusual in dessert but it lifts this to another dimension. It’s the prefect comfort food – rather like a rich bread and butter pudding. Perfect cozy cold weather food. The rosemary is unusual for a desert but really works in this dish give it a try. We’re sure you and the family will love it.

Ingredients

  • 300g day old white bread, crusts removed torn in pieces
  • 600ml milk
  • 3 large eggs, beaten
  • 2 sweet apples (pink lady), cored and finely chopped
  • 2 firm ripe pears (buerre bosc), cored and finely chopped
  • ½ cup raisins
  • ½ cup caster sugar
  • 50g butter, melted
  • 1 pinch sea salt
  • finely grated rind of 1 large lemon
  • 1 teaspoon of vanilla extract

for the topping

  • 1 tablespoon of fresh rosemary leaves
  • golden demerara sugar or raw sugar for scattering

to serve

  • thick cream or ice cream

Method

  1. In a large bowl soak the bread in the milk for about an hour to soften it. Preheat your oven to 180°C.
  2. Line the base of a 24cm spring form tin with Multix Bake and brush the sides with a little of the melted butter.
  3. In a medium bowl mix the chopped fruit, raisins, sugar, vanilla, lemon rind, salt and eggs. Drain off any milk that hasn’t been absorbed from the bread and stir to break the bread up slightly, thoroughly stir in the fruit and egg mix.
  4. Transfer to the lined tin and drizzle with melted butter. Top with rosemary leaves and a generous layer of golden sugar.
  5. Bake until golden and cooked through (50 minutes to 1 hour). Allow to cool for 10-15 minutes then remove the sides of the tin.
  6. Serve warm with dollops of cream or ice cream.

Hot Tip: Using Multix printed bake to line the baking tray makes it all so easy just cut out the size base you need from the lines marked on the baking paper.
