Lemon vanilla yoyos

No-one can resist a yoyo in the shop, but we think you will after you make our lemon vanilla yoyos. If you want a biscuit flavor that reminds you of your nanna’s kiss, make these. If your looking for low fat, low sugar biscuits you might need to give these a miss, but they are just SO good.

Ingredients

  • 125g plain flour sifted
  • 125g butter, softened
  • 50g icing sugar sifted
  • 50g unsweetened custard powder sifted
  • 1 small pinch salt

lemon vanilla butter cream

  • 100g pure icing sugar
  • 50g butter, softened
  • 2 teaspoons of grated lemon rind
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract

Method

  1. Preheat oven to 160oC. Line a large oven tray with Multix Bake.
  2. In a stand mixer cream butter and icing sugar until it’s light and fluffy. Add the salt and with the mixer on a low speed gradually add the flour and custard powder. Process slowly until it forms a stiff smooth dough. Roll teaspoons of the mixture into small balls about 3cm across. Place them on the lined baking tray with about 2-3 cm between each one to allow room for expansion and press each one down gently with a fork.
  3. Bake in the preheated oven for about 15 minutes. Or until very light golden.
  4. Remove from the oven and allow to cool for about 30 minutes.
  5. While the biscuits cool, make the butter cream filling. In a electric mixer, beat the softened butter and icing sugar together till light and fluffy. Add the vanilla extract, lemon juice and grated rind. Sandwich a little of the vanilla lemon butter cream between the flat side of 2 cooled biscuits and repeat with all the rest.
