Fruit nut bars

These fruit nut bars are full of natural proteins and offer a high energy and natural plant based pick-me-up anytime. Best of all they are absolutely delicious! Making your own snacks and treats means you know exactly what’s in them and can control your cane sugar intake.

Ingredients

  • 100g coconut oil, at room temperature
  • 400g fresh dates, pitted
  • 1 cup desiccated coconut
  • 3 tablespoons unhulled tahini
  • ½ cup raw cacao powder
  • 1 cup raw almonds
  • 1 cup dried cranberries or sultanas
  • 1 cup pepitas
  • ½ cup sunflower seeds
  • ½ cup hazelnuts

  • ¼ cup desiccated coconut

Method

  1. Line a 20 x 30cm slice tin with Multix Bake.
  2. In a food processor add pitted dates, tahini, softened coconut oil, cacao powder and desiccated coconut. Blitz for about 3 minutes or until you have a smooth thick paste. Transfer to a large mixing bowl, add the dried fruit, raw almonds, pepitas, sunflower seeds and hazel nuts.
  3. Using a large metal spoon or large wooden spoon mash and stir them into the date and cacao paste until evenly distributed. Spoon the fruit and nut mixture into the lined slice tin, pressing down firmly with a egg flipper or the back of the spoon until the mixture is packed down and smooth in the tin. Scatter the top with extra nuts and dried fruit, finish off with a loose scatter of coconut. Use the back of the spoon or a spatula to press the fruit and nut topping lightly into the top of the slice.
  4. Cover with Multix Cling and refrigerate for at least 1 hour or until ready to serve. Cut in small squares and eat anytime you need a high energy pick me up.
