Dark chocolate mint mousse

Ingredients

  •  4 large eggs, separated
  • 100g icing sugar, sifted
  • 200g 70% dark chocolate, broken into small pieces
  • 250ml thickened cream, whipped
  • 1 small pinch of salt
  • 2 Nestle Peppermint Crisp, to decorate

You'll Need

  • 1 Multix Resealable Slider Sandwich bag
  • Multix Cling
  • Multix Freezer bags
  • 6 ramekins or latte glasses

Method

  1. Place the chocolate pieces in a Multix slider bag, seal and heat on high for about 1 minute in a microwave or until thoroughly melted, allow to cool slightly.
  2. Place the egg yolks and icing sugar in the bowl of an electric mixer and whisk until thick and creamy (enough to leave a trail when you lift the whisk out of the mix), this normally takes about 3 to 4 minutes.
  3. Snip the end of the slider bag, pour in the slightly cooled chocolate and whisk together with the egg mixture. Stir in the whipped cream.
  4. Using a clean and dry metal bowl whisk the egg whites with a small pinch of salt until they form very stiff peaks. Using a metal spoon carefully fold in the whisked egg, cream and chocolate mixture until you have a smooth chocolate mousse texture.
  5. Divide the mousse between the prepared glasses or ramekins and cover with cling film.
  6. Refrigerate for about 4 hours until firm.
  7. Just before you want to serve, remove from the fridge. Place the peppermint crisps in a freezer bag and using a rolling pin to break them gently into mint and chocolate shards.
  8. Remove the cling film from the mousses and sprinkle sparkling mint crisp shards over the top of each one. Serve right away.

Hot Tip. Melting chocolate is always made easier by using a Multix slider bag and guess what no mess or washing up.
