Cosmopolitan jelly shots

The classic cosmopolitan is a very simple drink made famous by Sex and the City. A cosmopolitan, or informally a cosmo, is a cocktail made with vodka, triple sec, cranberry juice, and freshly squeezed or sweetened lime juice. We’ve just added another level of quirkiness to this fun and fruity cocktail.

Ingredients

  • 2 x 85g packs portwine jelly crystals
  • 550ml cranberry juice or cranberry juice drink
  • juice of 2 limes
  • 150ml vodka
  • 150ml Cointreau

You'll Need

  • 12 scalloped muffin cups
  • Multix Bake
  • Multix Cling
  • 12 cocktail parasols

Method

  1. Line a baking tray with Multix bake and set out the 12 scalloped muffin cups.
  2. In a large jug combine the vodka, Cointreau, lime juice and 300ml of the cranberry juice. In a small sauce pan on medium heat add the remaining 250ml of cranberry juice, bring to the boil, then remove from the heat and add the jelly crystals, stirring until fully dissolved. Allow to cool slightly, then add to the alcohol and juice mix. Stir to mix thoroughly. Divide equally between the muffin cups, cover with cling film and pop in the fridge for at least 4 hours until set. Serve chilled with a parasol in each one.
