Black forest muffins

Be sinfully naughty with these brownie style dark chocolate & black cherry muffin topped with luscious dark chocolate ganache and a fresh cherry sound! They are absolutely decadent and totally heavenly! Read on for this show stopping recipe.

Ingredients

 for the muffins

  • ¾ cup cocoa
  • ½ cup boiling water
  • ½ teaspoon baking powder
  • 1 teaspoon vanilla extract
  • ¾ cup butter, melted
  • 1 cup brown sugar
  • 2 eggs
  • 1 pinch salt
  • 1½ cups self raising flour
  • 1 cup pitted sour black cherries drained

 for the chocolate ganache

  • 200g dark chocolate
  • 1 cup cream
  • 12 fresh black cherries to garnish (optional)

  • Multix Bake
  • Multix Cling
  • Multix Piping bags

Method

  1. Preheat the oven to 180°C. Line a 12 hole muffin pan with Multix large Foil Patty Pans.
  2. Using a mixer, blend the cocoa and baking powder with boiling water until smooth. Add the eggs, sugar and melted butter and beat until smooth. Fold in the flour and salt until the batter smooth and slightly runny. Stir in the drained cherries.
  3. Divide the mixture evenly between the patty pans.
  4. Put the tray into the oven and cook for 15-20 minutes or until a skewer comes out clean when you test the muffins. Remove form the oven and set aside until cold.
  5. While the muffins are cooling make the ganache. Add the cream and chocolate to a medium saucepan on a very low heat, melt the chocolate remove from the heat and then beat until the ganache cools slightly and thickens. (To speed up this process you can use your electric mixer) Cover with Multix cling and set aside in the refrigerator until the muffins are cool.
  6. When the muffins cool, transfer the cooled ganache to a Multix Piping Bag fitted with a large star nozzle. Pipe a swirl of chocolate ganache (If it’s a little firm from the fridge the warmth of your hands will soon soften it) and finish each muffin with a fresh black cherry.
