Baked spiced peaches with mascarpone

This recipe with its subtle spicing enhances the flavours of a luscious ripe peach while the creamy mascarpone and crispy caramelised sugar with make you very glad each peach has 2 halves and both are for you!

  • 4 ripe peaches
  • 4 tablespoons mascarpone cheese
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground cardamom
  • 6 tablespoons granulated raw sugar

to serve

  • More slightly sweetened mascarpone or vanilla ice cream.

You'll Need

  • Multix Alfoil


  1. Preheat the  grill to medium.
  2. Line a shallow oven tray with a thick layer of crushed Multix Alfoil.
  3. Cut the peaches in half and twist them to remove the stones. Sit them into the crushed Alfoil (to hold them upright while their cooking) and spoon half a tablespoon of mascarpone on each peach, half sprinkle each one with a little ground cardamom and cinnamon and top with a thick layer of sugar.
  4. Place the oven tray under the grill and grill the peaches until they start to soften and the topping caramelises.
  5. Serve immediately with either dollops of lightly sweetened mascarpone cheese or vanilla ice cream.
