Bacon and chilli crisps

Devilishly delicious these bacon and chilli crisps are a sinful treat either served with pancakes and maple syrup or crumbled for extra crunch over a salad.

Ingredients

  • 8 rashers of bacon
  • ½ cup dark brown sugar
  • ½ cup finely chopped pecans
  • 1 large pinch chilli flakes
  • 1 long red chilli deseeded and finely sliced

Method

  1. Preheat oven to 180°C.
  2. Line a large baking tray with Multix bake and place bacon in a single layer on the tray. Place it in the oven and allow it to bake until it is about 2/3 cooked through and the edges have started to brown and curl.
  3. Meanwhile in a small bowl mix the sugar, chopped pecan nuts, fresh chilli and chilli flakes. Coat each rasher generously with the sugar, chilli and pecan mix.
  4. Return to oven and bake for another 10 or so minutes – you want the bacon to look a bit darker than you would normally cook it.
  5. Serve warm with pancakes and maple syrup or corn bread.

Note: Its great broken over a green salad for extra flavour.
